High Tea Delights At Richmonde’s Bizbar

Imagine an afternoon filled with delightful bites and enriching conversations at the BizBar, Richmonde Hotel Iloilo. My dining experience was elevated by the warm company of Richmonde Hotel Iloilo's General Manager, Nathalie Lim and Iloilo Festival Foundation Inc. (IFFI) President, Allan Tan.

Our intimate tea session started with Tan enthusiastically sharing the exciting events and festivals IFFI is planning, making a strong case for why you must #VisitIloilo. Though Tan had to leave early for family commitments, the evening was far from over. Nathalie introduced us to the culinary delights of BizBar, presenting a high tea set that celebrates everything Ilonggo.


The three-tier pastry tower was a sight to behold. The top tier featured Ube Halaya Macaron, Dragonfruit Macaron, Tablea Banana Eclair, and Batuan Tart. Each bite was a journey through Iloilo's rich agricultural heritage. The macarons, filled with locally harvested crops, were vibrant and delicious.


My personal favorite, the Tablea Banana Eclair, combined the subtle sweetness of local kakao from Pavia with tangy banana, creating a symphony of flavors. Ms. Nathalie shared that this treat not only tastes divine but also provides antioxidants and minerals, potentially benefiting heart health.


The middle tier was the real showstopper, promising a hearty fill.


The Sampaguita Smoked Salmon Sandwich offered a fragrant twist, while the Chicken Inasal Empanaditas, inspired by Iloilo's famous Inasal, were savory delights. The Karne Frita Grilled Cheese, an Ilonggo spin on beef tapa, was rich and satisfying.


Finally, the bottom tier provided the perfect sweet ending with Scones, Carabao Faux Cream, Heirloom Tomato Jam, and Tultul Latik Spread. The Tultul Latik Spread, made with Tultul salt from Guimaras, was particularly unique and delightful.


As we savored these delicacies, Nathalie shared fascinating insights into the local ingredients and the pride they take in crafting everything in-house. "We are proud of this high tea set, as it celebrates everything Ilonggo," she said with a smile. Her deep knowledge of Iloilo’s culture and cuisine, despite being a Manileña, was impressive. She truly embodies the #VisitIloilo campaign, showcasing the best of Ilonggo culture and hospitality.
