In his illustrious career spanning over 30 years, Chef Gordon Ramsay has traveled the world, sampled countless dishes, and hosted hit reality shows like MasterChef and Hell’s Kitchen.
So, what has been the best dish he's ever tasted?
At a fan meet yesterday at the Newport Performing Arts Theater in Pasay City, Ramsay admitted that picking just one was a challenge.
However, when prompted to recall the best dish he's tasted in recent years, he didn’t hesitate to mention the unique flavors of Sisig, a Filipino dish served at the Melbourne-based restaurant Serai by Filipino Chef Ross Magnaye.
“There’s a young kid in Melbourne, he’s blowing up on the internet, and he’s a Filipino Chef. The rest of it is all from his grandma, and the restaurant’s called Serai,” Ramsay shared enthusiastically.
He went on to describe a memorable experience where he enjoyed Taco Sisig, which included crispy pig's ears, nose, and snout all tucked inside a taco. “How exciting is that?” he marveled at the combination.
Issa Litton, the fan meet host, suggested pairing the Sisig with beer, a popular Filipino practice, to which Ramsay agreed.
But that wasn't the only dish from Serai that impressed Ramsay.
He also delighted in a bone marrow dish that featured caramelized bone marrow, doused in vodka and torched to create a stunning visual and flavor experience. “Absolutely bang on, it was delicious! And I just swallowed it!” he said, recalling the rich sensation of the marrow running down his throat.
Serai, known for its inventive takes on Filipino dishes, made a mark on Ramsay when Chef Magnaye and his team competed on MasterChef Australia, the Australian version of the MasterChef series Ramsay hosted.
Serai’s Instagram describes the restaurant as offering “Filipino dishes reimagined and cooked over a wood-fired grill, fun cocktails, and an all-natural wine list,” which Ramsay praised. “This is where Filipino cuisine should be,” he said, admiring the fusion of traditional Filipino flavors with Australian culinary creativity.
He reminisced about growing up with Filipino food, particularly dishes made with intestines, and the nostalgic taste of rice pudding with evaporated milk and tarts—flavors that still take him back to his childhood.
"You guys have a very sweet tooth," Ramsay said, appreciating the Filipino penchant for sweetness.
For Ramsay, the best dishes are those that evoke fond memories, and Serai's creative Filipino offerings certainly hit the mark.
