Local gelato brand offers Filipino flavors

A local gelato manufacturer says he wants to ensure that local farmers and manufacturers benefit the most from his business.

Food fusion in the form of gelatos, anyone?

This homegrown food brand, Koibito’s World of Gelato, infuses Filipino flavors to gelatos. Based in Batangas, this brand is led by Roger Monsale and his wife Abigail.

“Koibito” is the Japanese term for “lover”.

Roger planned to put up a gelato business in the Philippines after visiting Italy. “I wanted to help local farmers because I know we’re rich in raw materials here,” he said.

“I buy my milk on the day of or the day before we process our gelato,” he said.

While some of his ingredients are imported, he makes sure that local farmers and manufacturers benefit the most from his business.

Some of the local ingredients he sources are mulberries from Laguna; cashew butter from Rizal; tablea chocolate, coffee and milk from Batangas.

What’s more is that their gelators are generally healthy as they use less sugar than normal. They also have no-sugar-added flavors like Pistachio and Giandujia.

“We took out the sucrose but there’s still plant-based ingredients safe for diabetics in order to achieve the right consistency and texture,” said Angeli.
“We value the health of the Filipino in terms of adapting the original way of making gelato.”
